Delicious Homemade Aam ka Aachar !!!!

 



Ingredients:

  • 2 large raw mangoes (firm and sour), peeled and cut into small pieces
  • 2 tablespoons mustard seeds
  • 1 tablespoon fenugreek seeds
  • 1 tablespoon fennel seeds
  • 1 tablespoon nigella seeds (kalonji)
  • 1/4 cup red chili powder (adjust to taste)
  • 1/2 teaspoon turmeric powder
  • 1/2 cup mustard oil (or any vegetable oil)
  • Salt to taste


Instructions:

  • Peel and cut raw mangoes into small pieces. Sprinkle salt over the mango pieces and set aside for 20-30 minutes.
  • Dry roast mustard seeds, fenugreek seeds, fennel seeds, and nigella seeds. Grind them to a powder.
  • Combine red chili powder, turmeric powder, and ground spice powder in a bowl.
  • Heat mustard oil (or any vegetable oil) until smoking, then let it cool slightly.
  • Mix the spice-oil mixture well.
  • Squeeze out excess moisture from the mango pieces and transfer them to a glass jar.
  • Pour the spice-oil mixture over the mango pieces and mix thoroughly.
  • Cover the jar and keep it in a cool, dry place for a week, shaking it gently daily.
  • After a week, the mango pickle is ready. Store it in the refrigerator for a longer shelf life.
