Delicious Homemade Aam ka Aachar !!!!
Ingredients:
- 2 large raw mangoes (firm and sour), peeled and cut into small pieces
- 2 tablespoons mustard seeds
- 1 tablespoon fenugreek seeds
- 1 tablespoon fennel seeds
- 1 tablespoon nigella seeds (kalonji)
- 1/4 cup red chili powder (adjust to taste)
- 1/2 teaspoon turmeric powder
- 1/2 cup mustard oil (or any vegetable oil)
Instructions:
- Peel and cut raw mangoes into small pieces. Sprinkle salt over the mango pieces and set aside for 20-30 minutes.
- Dry roast mustard seeds, fenugreek seeds, fennel seeds, and nigella seeds. Grind them to a powder.
- Combine red chili powder, turmeric powder, and ground spice powder in a bowl.
- Heat mustard oil (or any vegetable oil) until smoking, then let it cool slightly.
- Mix the spice-oil mixture well.
- Squeeze out excess moisture from the mango pieces and transfer them to a glass jar.
- Pour the spice-oil mixture over the mango pieces and mix thoroughly.
- Cover the jar and keep it in a cool, dry place for a week, shaking it gently daily.
- After a week, the mango pickle is ready. Store it in the refrigerator for a longer shelf life.
