Serves: 4-6 people
Ingredients:
- 1 kg boneless chicken, cut into bite-sized pieces
- 1 cup plain yogurt
- 2 tablespoons lemon juice
- 2 tablespoons ginger-garlic paste
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon turmeric powder
- 1 teaspoon paprika or Kashmiri red chili powder (for a mild version)
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon garam masala
- 1/2 teaspoon salt (adjust to taste)
- 2 tablespoons cooking oil
- Skewers (soaked in water, if using wooden skewers)
Instructions:
- In a bowl, combine the yogurt, lemon juice, ginger-garlic paste, ground cumin, ground coriander, turmeric powder, paprika or red chili powder, garam masala, salt, and cooking oil. Mix well to make a marinade.
- Add the chicken pieces to the marinade and coat them thoroughly. Make sure each piece is well coated with the marinade. Marinate for at least 2 hours, or ideally overnight in the refrigerator.
- Preheat your grill or oven to medium-high heat.
- If using wooden skewers, soak them in water for about 30 minutes to prevent them from burning.
- Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece.
- Grill the chicken skewers for about 10-15 minutes, turning them occasionally, until the chicken is cooked through and nicely charred on the outside. If using an oven, you can place the skewers on a baking sheet lined with foil and broil on high for about 10-15 minutes, turning once.
- Once cooked, remove the chicken tikka skewers from the grill or oven.
- Serve hot, garnished with fresh cilantro leaves and accompanied by mint chutney, onion slices, and lemon wedges.
