Ingredients:
1/2 kg boneless mutton, cut into bite-sized pieces
2 onions, finely sliced
2 tbsp vegetable oil
2 tbsp ghee or clarified butter
1 tbsp ginger-garlic paste
2-3 green cardamom pods
1 cinnamon stick
1 bay leaf
1 tsp cumin powder
1 tsp coriander powder
1 tsp fennel powder
1 tsp paprika
1/2 tsp turmeric powder
1/2 tsp red chili powder
1 cup plain yogurt
Salt, to taste
1/4 cup chopped fresh cilantro, for garnish
Directions:
In a large pot, heat the oil and ghee over medium heat. Add the sliced onions and cook until golden brown, stirring occasionally.
Add the ginger-garlic paste to the pot and cook for 1-2 minutes, stirring constantly.
Add the green cardamom pods, cinnamon stick, and bay leaf to the pot and cook for 1-2 minutes, until fragrant.
Add the mutton to the pot and cook for 5-7 minutes, stirring occasionally, until the mutton is browned on all sides.
Add the cumin powder, coriander powder, fennel powder, paprika, turmeric powder, and red chili powder to the pot and stir to combine.
Add the yogurt to the pot and stir to combine. Cook for 5-7 minutes, stirring occasionally, until the yogurt is well combined and the mutton is cooked through.
Add salt to taste and garnish with chopped cilantro. Serve hot with rice, naan or roti. Enjoy your delicious Mutton Rogan Josh!
